Health Impacts of E. coli Contamination in Raw Ground Beef
To date, there have been no confirmed reports of illness linked to this recall. However, the risk posed by E. coli O157:H7 should not be underestimated, as it can lead to severe dehydration, bloody diarrhea, and abdominal cramps within a few days after exposure. In severe cases, especially in young children and the elderly, it can lead to a life-threatening form of kidney failure known as hemolytic uremic syndrome (HUS).
FSIS continues to emphasize the importance of cooking ground beef to an internal temperature of 160°F, which should be verified with a food thermometer, to ensure safety from pathogens.
